Drinks like the refreshing Bitter Fizz are premade and served from a keg that keeps them fresh. It’s the vision of Mixologist Jan Henrichsen, who joins B&B after stints at Fat Rice and Evanston’s Found Kitchen + Social House. Of this citrus specialty, she says, “If this drink was a band, every note would be in perfect harmony.” Of course you can make it to order, too.

—12 oz. tall glass
—1 oz. CH London Dry Gin
—1 oz. Luxardo Aparitivo
—.5 oz. lime juice
—1 oz. simple syrup

1. Fill the glass with ice.
2. Add all the ingredients and top with a splash of club soda.
3. Roll and garnish with fresh herbs, preferably tarragon (optional).

—.5 oz. Batavia Arrack (or Blanc Rhum Agricole)
—1 oz. tonic water
